RED CEDAR VINEYARD | Paso Robles
FLAVOR: Aromas of bing cherry and dark olive, with hints of pepper and oak. Juicy cherry and black-currant flavors and soft, round tannins.
FOOD PAIRING: Pair with lamb, beef, pork, veal, poultry, pasta, and bean dishes, especially those featuring brown sauces or fresh herbs, and medium-flavored cheeses.
VINEYARD: Grown on calcareous, silty loam and clay soils on bench-lands overlooking the Estrella River, east of Paso Robles city.
WINERY: Fermented in temperate-controlled stainless stell tanks for about two weeks, pressed off to age 9 months for tank and barrel. Bottled in the late summer, before the vintage.
