This “little peacock”of a wine blends grapes from Sonoma Coast, Anderson Valley, Santa Rita Hills, Santa Lucia Highlands, and Carneros provide the grapes that go into Pavette. After fermentation, Pavette ages for 10 months, with 70% of the wine in stainless steel and 30% in French oak, lending brightness and acidity while grounding the structure.
